Het is zondag wat betekent dat het weer tijd is voor een gezond recept. Vandaag zijn dat deze superlekkere guilt free eimuffins, die hartstikke geschikt zijn als onbtijt of lunch. Dit recept komt uit het voedselzandloper kookboek (een aanrader!) en is dus voedselzandloper proof.

Ingrediënten 
– 6 eieren
– 100 gram kerstomaatjes
– 50 gram verse doperwten
– 2 lente-uitjes
– handje peterselie
– handje bieslook
– 40 gram geraspte belegen kaas
– zout en peper

Bereiding
1. Verwarm de oven voor op 180 graden
2. Was de tomaten en snijd deze in vieren
3. Snijd de lente-ui in ringetjes
4. Hak de peterselie en de bieslook fijn
5. Vet een muffinvorm in
6. Verdeel de tomaatjes, doperwten en lente-uitjes over de bodem van de muffinvorm
7. Klop de eieren luchtig en voeg de peterselie en bieslook toe
8. Meng de gersapte kaas door de eieren en voeg een beetje zout en peper toe
9. Giet de eivulling over de groenten in de muffinvorm
10. Zet ongeveer 30 minuten in de oven. Als ze goudbruin van boven zijn, zijn ze klaar.

It’s Sunday which means it’s time for a healthy recipe again. Today I’m sharing these delicious guilt free egg muffins with you. They’re great for breakfast or lunch. I’ve got this recipe from the food hourglass cooking book (a must-read!) and therefore it’s food hourglass proof.

Ingredients 
– 6 eggs
– 100 gram cherry tomatoes
– 50 gram peas
– 2 scallions
– a handful parsley
– a handful chive
– 40 grams grated cheese
– salt and pepper

Preperation
1. Preheat the oven to 180 degrees
2. Wash the tomatoes and cut in four
3. Slice the scallions in rings
4. Chop up the parsley and chive
5. Grease a muffin form
6. Divide the tomatoes, peas and scallions across the bottom of the muffin form
7. Whisk the eggs and add the chive and parsley
8. Mix the grated cheese through the eggs and add a bit of salt and pepper
9. Pour the egg mixture on top of the vegetables in the muffin form
10. Put in the oven for approximately 30 minutes in the oven. They’re done when they’ve become golden brown on top.
